When golf legend Jack Nicklaus and his wife, Barbara, began the process of developing their very own line of premium ice cream pints, they knew vanilla was a must-have on their list of core flavor offerings.
Vanilla is the most popular flavor among ice cream fans in the United States. The flavor’s versatility allows it to be easily combined with a multitude of toppings; paired with desserts; and even wedged between cookies and wafers. With such popularity, many new varieties of the classic flavor have popped up on the market through the years (vanilla bean, French vanilla, creamy vanilla), but it was important to Jack and Barbara to develop a traditional flavor that would inspire fond memories of making ice cream at home.
“There are a lot of different vanillas out there today. When the Nicklauses worked with us on this project, they really wanted to create an ice cream that consumers would enjoy eating with their families while sitting around the table at home,” said ice cream developer Jill Maisch, who worked closely with the Nicklaus family on the flavor at The Schwan Food Company’s Product Innovation & Development Center.
“Our Homemade Vanilla features a creamy texture and a hint of cooked vanilla that we hope reminds our customers of old family recipes and traditions.”

When Jack Nicklaus and his wife, Barbara, sat down with Schwan’s ice cream experts to develop his line of premium pints, the golf legend revealed one of his favorite ice cream flavors: Butter Pecan.
Knowing this, the team worked closely with Jack, a self-proclaimed ice cream connoisseur, to perfect the flavor and make sure it would exceed everyone’s expectations. The final version was JACK NICKLAUS Warm Spiced Butter Pecan Ice Cream, which features a rich, smooth blend of creamy brown sugar ice cream, ribbons of special Brown Betty sauce, and spiced praline pecans.
“The difference with our version of this classic flavor combination is that we use ribbons of the Brown Betty sauce and full praline pecans instead of the commonly used halved pecans,” said Jill Maisch, a senior food scientist at Schwan’s, who helped develop flavors for JACK NICKLAUS Ice Cream. “We used a traditional pecan pie as the inspiration for the flavor. Our goal was to layer in the ingredients to give ice cream lovers depths of flavors to enjoy.”

Football may not have been the main sport for golf icon Jack Nicklaus, but there is no doubt that he and his wife, Barbara, will be serving a scoop or two of JACK NICKLAUS Chocolate Peanut Butter Swirl ice cream as they support their alma mater, The Ohio State University, and cheer on the Buckeyes this football season. The 2014 National Champions kick off another season on Sept. 3 at home in “The Shoe” against Bowling Green State University.
Jack’s father, Charlie, played football at Ohio State, and Jack grew up a passionate Buckeyes fan, who didn’t miss a game from age 6 to 20. So there was no doubt where Nicklaus would play his college golf. As one of the most-decorated Buckeyes in history, Nicklaus won a Big Ten and NCAA title at Ohio State, as well as two U.S. Amateur Championships. He turned professional in the fall of 1961, and was awarded an honorary doctorate from Ohio State in 1972. He was inducted into the Ohio State Athletic Hall of Fame in 1977.
But arguably the most important thing to happen to Jack Nicklaus while at Ohio State, and what certainly shaped the rest of his life, was meeting Barbara Jean Bash on the steps of Mendenhall Laboratory during their first week on campus. The two were married in 1960, and are the parents of five children and grandparents to 22.
The Ohio State mascot has the same name given to Ohio residents — Buckeyes. In Jack and Barbara’s native Midwest, buckeyes are also a popular candy made by dipping a ball of peanut butter fudge in chocolate. Makers of the candy typically leave a small circle of peanut butter visible to give it the look of the buckeye nut.

When The Schwan Food Company’s product developers sat down with Jack and Barbara Nicklaus to work on flavors for the new Jack Nicklaus Ice Cream, everyone was excited about how engaged the first family of golf was on the project.
This was certainly apparent while choosing the original seven flavors for the JACK NICKLAUS brand. Jack, Barbara and the marketing team each knew they wanted one of the original flavors to be chocolate. However, Jack said he didn’t want just a regular, “everyday” chocolate ice cream. He wanted something special with “chunks of chocolate.”
“He told us he wanted a delicious chocolate ice cream with a lot of chunks and textures,” said Jill Maisch, a senior food scientist at Schwan who worked on the project with the Nicklauses. “He really knew his ice cream and was extremely specific in what he was looking for.”
The team then worked with the self-proclaimed ice cream aficionado and his wife on the new ice cream and developed every chocolate lover’s dream. They started with creamy, premium chocolate ice cream, added moist chocolate brownies for a soft texture and finished it off with flavorful chunks of dark chocolate.
“Jack and Barbara were extremely happy with the end result — as they have been with all of the flavors,” Jill said. “It was fun to work with him on the project.”
